This is the Lazy Way recipe for banana pancakes. It’s great to have for breakfast or as a quick snack.

You will need:

  • Some flour.
  • Some milk.
  • Some eggs.
  • A banana (or other tasty filling).
  • Some butter.

The flour and milk (I used about 500ml here) should be roughly the same quantity. Experiment a bit for the consistency you like most. Any flour will do but I used plain old plain flour here.

Put the milk, eggs and flour into some kind of mixing device.

Mix it up.

Pour the mix into a suitable container. Leave it to settle for a bit and clean up your blender/whatever.

Put a little butter into a non-stick pan and get it nice and hot.

When it starts to sizzle pour in some pancake mix.

(You can keep the remaining mix in the fridge and have pancakes every day)

Wait until it bubbles and goes a darker colour.

Flip it over and spread your filling over one side.

Lift the edge to see if it’s starting to brown. When it is transfer to a plate and fold the pancake over.

Done.

Added sugar or other rubbish is NOT required – You’re sweet enough!

It doesn’t matter if you don’t have a blender. You can mix it in anything like a bottle or jar by shaking it vigourously for a few seconds.
